Swirled Pumpkin Cream Cheese Bars

It is 83 degrees out right now.  It is hot, and humid, and a month ago I would be happy wearing a sundress, sipping my iced coffee and dreaming of the beach. But now it’s September and it’s Fall.  Now it’s time for fall leaves, and football, and scarves, and most importantly pumpkin. That being said, you can imagine my surprise when I went to the grocery store nearest my apartment to find out they don’t have it in stock yet. What? Apparently it is a “seasonal item.” Right….and isn’t this the season?
Anyway- luckily for me, I am an ingredient sleuth and I always find what I need. And even luckier for me, I baked these delicious bars when I wasn’t in my neighborhood anyway! I was in the Upper East Side babysitting for one of my favorite little girls named Stella. 
She is the sweetest most fun 11 year old on the planet and of all the babysitting jobs I’ve had since moving here 5 years ago, (so many I can’t even count,) Stella is one of my favorites. So you can imagine how excited I was when her Mom texted me saying, “I was thinking maybe You and Stella could bake something together.” Um…..of course! Especially because this meant I got to bake in their huge and amazing kitchen with a beautiful KitchenAid (I still don’t have one,) and have so much natural light I was able to take these pics at 7:30 PM!
Stella chose this recipe as she and I both love pumpkin, and it seemed simple enough that we’d be left with some time to play Monopoly and watch movies. These bars came together in no time, and since we used their fancy convection oven they were done in almost half the time the recipe suggested. (Don’t worry- I’m including the recipe for normal ovens.)

The texture of these is light and fluffy, almost cake-like, but not nearly as sweet. I took a few of these home and they were the best breakfast all week. They are almost like a pumpkin cream cheese muffin in bar format. Light, tasty, pumpkin-y and fun to make. May just be my perfect recipe. (And yes- since they did sell pumpkin in Stella’s hood, I stocked up. It feels like it’s the season to me!)

Swirled Pumpkin Cream Cheese Bars

Ingredients
6 tablespoons butter, melted and slightly cooled
1 3/4 cups sugar
3 large eggs
1 cup canned pumpkin
1 3/4 cups all-purpose flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1 package (8 oz.) cream cheese, at room temperature

Preparation
1. In a bowl, with an electric mixer on medium speed, beat butter and 1 1/2 cups sugar until smooth. Beat in 2 eggs, pumpkin, and 1/3 cup water until well blended, scraping down sides of bowl as needed. In another bowl, mix flour, cinnamon, baking soda, baking powder, and nutmeg; stir or beat into butter mixture until well blended. Spread batter evenly in a buttered and floured 10- by 15-inch baking pan.
2. In a bowl, with an electric mixer on medium speed, beat cream cheese, remaining egg, and remaining 1/4 cup sugar until smooth.
3. Drop cream cheese mixture in evenly spaced 1-tablespoon portions over batter. Pull a knife tip through filling to swirl slightly into batter.
4. Bake in a 350° oven until center of pumpkin batter (not cream cheese mixture) springs back when touched, about 30 minutes. Let cool completely in pan, then cut into bars.

    These are absolutely delicious! Hubby and I have been eating away at this pan all week. I kicked the recipe up a notch, hope you dont mind.But I added teaspoonfuls of cranberry/cherry sauce ,just before I put the cream cheese on. I didnt have a 10 X 15 pan so I used a 9X12, which made it more like a cake, but still wonderful! I also decreased the sugar to 1 cup, as we are trying to watch our caloric intake. I find most recipes are still sweet enough with 1 c. of sugar to 2 cups of flour. But , thanks so much for sharing your recipe. We love it!

  25. That’s funny! I had the same problem last year when there was a shortage in the pumpkin crop and you couldn’t find canned pumpkin anywhere. I ended up making pumpkin puree from scratch, because crazy enough pumpkins were everywhere despite the “shortage.” But when it finally hit the shelves again, man did I stock up!
