Lately I’ve been all about trying new and challenging recipes. I mean in the last few weeks I’ve made macarons, bagels, this cake, marshmallows and mastered the frosting swirl. So, when I was looking for a treat to take to a birthday party recently, I thought it was time to make something easy. You know- a recipe that is hard to mess up, simple and still incredibly delicious. Luckily, I had the perfect recipe waiting for me: a chewy delicious cookie that I’ve been dying to make ever since I first tried it weeks ago.
See, my friend Laura brought these cookies to the Superbowl party my sister hosted last month. After we devoured them, she mentioned that her Stepmom Carol had made them for her over a week ago. What?? These cookies were a week old and they were still soft, chewy and melt-in-your-mouth good? I couldn’t beleive it. I got the recipe from her as soon as I could and have been waiting to make them ever since. And wow- if I thought these were good after a week- you have no idea how good they are right out of the oven!
The original recipe contains chocolate chips and M&Ms, but the mix in options for these cookies are endless. I’m already envisioning them with butterscotch chips, toasted coconut etc. Also- they don’t contain any flour which was weird to me at first, but the chewy oatmeal-y texture was pretty darn perfect. I can’t wait to make these thick and chewy cookies again and again!

Good idea Katy- I LOVED those cookies. I think they were just huge fluffy sugar cookies with M&Ms. I should really try to figure them out. I’ll let you know if I do! :)
Hey Audra – I love your site. This post reminded me of one thing– do you think you could ever reproduce the Leslie Jensen’s mom’s cookies from our musical days? I’ve tried numerous times and it’s been so long, I can barely remember the tastes that made them SO good. But they were a variation of a monster cookie, right? OR at least they were “monster” big, hey-oh. ;) Anyway just a thought… wish you the best! Katy O.

I just made these and they came out great! I found the M&Ms sometimes got lost in the cookies, and I wanted to show the fun colors. Sticking 2-3 M&Ms on the top of the dough before baking did wonders for making sure they looked as good as they taste. Thanks for the great recipe!
