The number one question that I get asked when people meet me, knowing I have a baking blog, is- “How are you not fat?” Seriously- I get asked that weekly if not more often. I know it makes little sense- I’m baking, posting (and eating,) lots of treats per week and while I’ve definitely put on 5 lbs. since The Baker Chick was born, it hasn’t gotten out of hand. I exercise occasionally, (much to the dismay of my husband who is a personal trainer,) but what I really practice every single day is the art of moderation. For me if I eat a healthy diet I can still manage desserts several times a week as long as I don’t go overboard. I like a small slice of cake, or one brownie or cookie and then I typically give the rest away. It’s a system that works for me and I plan on sticking to it- as I never see giving up sweets in my future!

Did you have a good weekend? Mine was really great actually- Andy and I saw Iron Man 3 (loved it,) had some yummy Cinco de Mayo margaritas and on Saturday ventured to Brooklyn for to donate a batch of these brownies to the NYC Bake Sale. It was held at the Brooklyn Flea market (which I’ve always wanted to visit) and was a huge success! (They raised over 3,000 for No Kid Hungry!)

I know you’re not supposed to mess with a good thing, but sometimes you just have to. I mean, I thought I found the perfect chocolate chip cookie ages ago, and then I found an even better one. It’s hard to think of a way to improve on the chocolate chip cookie at all, but can I tell you that this recipe really does?  There is something about the use of coconut oil that just sends these over the edge. Short and sweet today..after two macaron-making sessions in the last week, I have been craving an easy recipe. You know- something that you just basically stir together and bake. These muffins are easy as pie to make, little mess, no mixer needed and I didn’t have to separate a single egg. If you saw my kitchen after “Macaron mayhem” as I like to call it- you’d understand why I loved making these so much.

I love Easter time. To me it represents everything new, fresh and bright. Spring has arrived, the flowers are starting to bloom, and the energy in the air seems to be one of happiness and hope. (though the current weather in NYC isn’t much of an indication of this!)  I love the welcome of soft pastels and  chocolate eggs filled with a variety of delicious fillings. As a child, my Easter mornings were spent at church in white mary janes and a fluffy floral dress (see below) followed by a near impossible egg hunt. Given my Irish roots, (my granddad James McCann was a full-blooded Irishman,) and the fact that my hubby has a fair amount of Irish blood as well, I couldn’t possibly let St. Patrick’s day go by without at least one themed treat. I’ll be in Paris on Sunday (omg) and won’t get to celebrate (which really only entails wearing green and eating some corned beef,) but eating these delicious brownies was good enough for me.

These brownies on their own don’t taste super boozy, and the addition of the stout really just adds a richness and depth of flavor. The caramel glaze brings a nice kick of whiskey, but that isn’t over-powering either, just a nice addition to the super chocolatey flavor from the brownies.

Marble Pound Cake

I’m starting to feel a little funny about a week from tomorrow. You see- I’m turning 30.  (Woah- it even sounds weird typing it…)

30 feels old. I know it’s not that old. I know that it’s really pretty young in the scheme of life, but it’s just about how it sounds. I mean- I’ve been in my 20s for so long. (Ok 10 years is the standard amount of time to be in my 20s, but it feels like a huge chunk of life.) I think its less about fear of growing older, and more about where I thought I’d be at 30, and a feeling of nostalgia about saying farewell a large part of my life.

To take my mind off of the big birthday, I’ve been baking up a storm. You see- when I feel anxious and freaked out, baking gives me a bit a calm. I also desperately want to have some posts for you when I’m in Europe so I’m actively working against my normal instincts of doing everything last minute!

If you haven’t made a marble cake before, I think it’s totally fun! I loved swirling this batter because it was so smooth and velvety. The finished cake is really to die for. Buttery and soft with alternating bites of chocolate and vanilla. I think the batter could work as cupcakes or even a fun marble-y layer cake. The options are endless!

On an off-subject, here is a funny video from a commercial I did a couple years ago. Definitely my best acting work of my 20s. :)

It’s my favorite day- Milk Bar Monday!! Man oh man did we pick a good one to share with you today. Maybe not the simplest recipe we’ve done- but it is so delicious and totally worth it. In fact, Andy claimed that this was his favorite recipe I’ve made from the Milk Bar Cookbook so far! (He even liked it better than the Sweet Corn Cereal Milk Ice Cream Pie which used to be his reigning fave.)

Like always with Christina Tosi’s cakes, this one has many different layers and fillings making each bite taste better than the one before. The base is a rich chocolate cake with thick fudge filling, charred marshmallows, malted milk “crumb” and Ovaltine “soak” which keeps each layer of cake extra moist and flavorful.

From the outside, my cake got a little smudgy as the fudge seeped out a bit, but for some reason I kind of loved the gooey messy look of it. The fudge was used in place of frosting so the whole thing was a bit ooze-y.

Once I cut into the cake though, I was so relieved to see that everything had more or less stayed in place, and that the gooey fudge only make the cake richer and more delicious. I tried the cake right out the fridge, but after I photographed it and let it sit out for a few minutes, and the fudge got soft and almost melty, it was even better.

I only made one small change to the original recipe which was to use all her recipe for classic hot fudge instead of making an additional batch of “malt hot fudge.” Erin mentioned that she liked the classic better, so I thought I’d save myself one step and avoid making two batches. I’m sure using the other makes it taste “maltier,” but I am really glad I made it as I did. That fudge sauce was to die for!

If you’re still deciding about getting on the bacon-in-desserts band wagon, now’s the time. I have to admit I wasn’t always so keen on the idea, but after two attempts at merging the salty, smoky, crispiness with sweet baked goods, I’m pretty sold. I made bacon-chocolate chip cookies with maple glaze last year and was a huge fan of  the mix of flavors. I mean haven’t you ever had a pancake, syrup, bacon bite on your brunch plate?
